Ingredients:

3/4 cup White sugar

Instructions:

  1. Cream butter and sugars together until light. In a large mixing bowl, combine the butter, white sugar, and brown sugar. Using a hand mixer or stand mixer, cream the ingredients together until they are light and fluffy.

  2. Add egg and mix well. Crack the egg into the mixture and blend until well incorporated. Ensure that the egg is fully mixed in with the butter and sugar.

  3. Mix together flour, oats, coconut, baking powder, and baking soda. In a separate bowl, whisk together the flour, rolled oats, shredded coconut, baking powder, and baking soda until evenly combined.

  4. Add to butter-sugar mixture and mix well. Gradually add the dry ingredients mixture to the butter-sugar mixture. Mix on low speed until the dough comes together and there are no streaks of dry ingredients visible.

  5. Stir in raisins. Once the dough is well mixed, gently fold in the raisins until they are evenly distributed throughout the cookie dough.

  6. Drop by spoonfuls onto lightly greased cookie sheets. Using a spoon, drop dollops of cookie dough onto lightly greased or parchment-lined baking sheets, leaving space between each cookie for spreading.
