Instructions:
- In a large bowl, combine the fast-rise yeast, salt, and 2 cups of flour.
- Stir in the very warm water and beat vigorously for 1 minute.
- Mix in the olive oil.
- Gradually add 2 1/4 cups of flour, stirring continuously.
- If using caraway seeds, add them now.
- Turn the dough onto a lightly floured surface and knead until smooth and elastic, approximately 8 minutes.
- Work in just enough of the remaining flour to prevent the dough from sticking.
- Loosely cover the dough with plastic wrap and let it rest for 10 minutes.
- Preheat the oven to 375ยฐF and grease 2 large cookie sheets.
- Cut the dough in half. Cover one half and cut the remaining half into 32 equal pieces.
- Shape each piece into a 12-inch long rope and place them 1 inch apart on the prepared cookie sheets.
- If not using caraway seeds, sprinkle the breadsticks with sesame seeds, poppy seeds, salt, or Parmesan cheese.
- Bake until golden and crisp, approximately 20 minutes. If using 2 cookie sheets, rotate them in the oven halfway through the cooking time.
- For a Rosemary-Fennel variation, omit the caraway, sesame, salt, poppy seeds, or Parmesan. Instead, add 2 teaspoons of crushed fennel seeds, 1 teaspoon of dried rosemary leaves (crumbled), and 1/2 teaspoon of coarsely ground black pepper to the mixture in step 1.
- Repeat the process with the other half of the dough.
