Crispy Chicken Cracklings with 3 Ingredients

Ingredients:

  • 3 tablespoons tapioca flour
  • 4-5 small ladles of chicken braising liquid
  • Cooking oil (enough for frying)

Instructions:

  1. Prepare the Batter: In a mixing bowl, combine the tapioca flour with the chicken braising liquid. Stir until well mixed, ensuring the consistency is neither too thick nor too thin. Adjust the amount of braising liquid if necessary to achieve the right texture.

  2. Heat the Oil: Pour a generous amount of cooking oil into a frying pan. Heat the oil over medium heat until it is sufficiently hot.

  3. Fry the Batter: Using a tablespoon, drop spoonfuls of the batter into the hot oil. Spread them out slightly with the back of the spoon. Fry until golden brown and crispy.

  4. Fold and Fry: Once the edges of the cracklings begin to turn golden, fold them over and continue to fry until they are a rich, golden brown. Remove from the pan and drain on paper towels.

  5. Cool and Store: Allow the cracklings to cool completely before transferring them to an airtight container.
