Indian Samosa Recipe

Ingredients:
For the Dough:
- 1 cup all-purpose flour
- 2 tablespoons oil
- 2 pinches of salt
For the Filling:
- 2 potatoes, boiled and mashed
- 2 onions, finely chopped
- 2 green chilies, finely chopped
- 1-inch piece of ginger, grated
- 2 cloves of garlic, minced
- 3 tablespoons cilantro (coriander), chopped
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon garam masala
- 1/2 teaspoon red chili powder
- 1/2 teaspoon salt (or to taste)
Instructions:

Prepare the Dough:
- In a mixing bowl, combine the all-purpose flour, oil, and salt.
- Gradually add water, kneading the mixture until it forms a soft, pliable dough.
- Cover the dough with a moist cloth and set it aside for 20 minutes.
- After resting, knead the dough again and set it aside.

Prepare the Filling:
- Heat 3 tablespoons of oil in a pan.
- Add the grated ginger, minced garlic, chopped green chilies, and a few coriander seeds. Stir-fry for about a minute.
- Add the finely chopped onions and sauté until they turn light brown.
- Stir in the chopped cilantro, lemon juice, turmeric powder, red chili powder, salt, and garam masala. Cook for 2 minutes.
- Mix in the mashed potatoes and stir-fry for an additional 2 minutes.
- Remove the filling from the heat and allow it to cool.

Assembly:
- Divide the dough into 10 equal portions.
- Using a rolling pin, roll each portion into a 5-inch oval.
- Cut each oval in half to form two semi-circles.
- Moisten the straight edge of each semi-circle with water.
- Roll each semi-circle into a cone shape, sealing the moistened edge.
- Fill each cone with a tablespoon of the prepared filling.
- Seal the open end of each cone by pressing it together with moistened fingers.

- Heat oil in a deep frying pan over low to medium heat.
- Carefully place the stuffed samosas into the hot oil.
- Fry until they turn light brown and crispy on all sides, flipping occasionally.
- Once cooked, remove the samosas from the oil and drain them on paper towels to remove excess oil.

- Serve the freshly fried samosas hot with your favorite dipping sauce, such as tomato sauce or any chutney of your choice.
