Indian Samosa Recipe

Ingredients:

For the Dough:
  • 1 cup all-purpose flour
  • 2 tablespoons oil
  • 2 pinches of salt
For the Filling:
  • 2 potatoes, boiled and mashed
  • 2 onions, finely chopped
  • 2 green chilies, finely chopped
  • 1-inch piece of ginger, grated
  • 2 cloves of garlic, minced
  • 3 tablespoons cilantro (coriander), chopped
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon salt (or to taste)

Instructions:

  1. Prepare the Dough:

    • In a mixing bowl, combine the all-purpose flour, oil, and salt.
    • Gradually add water, kneading the mixture until it forms a soft, pliable dough.
    • Cover the dough with a moist cloth and set it aside for 20 minutes.
    • After resting, knead the dough again and set it aside.
  2. Prepare the Filling:

    • Heat 3 tablespoons of oil in a pan.
    • Add the grated ginger, minced garlic, chopped green chilies, and a few coriander seeds. Stir-fry for about a minute.
    • Add the finely chopped onions and sauté until they turn light brown.
    • Stir in the chopped cilantro, lemon juice, turmeric powder, red chili powder, salt, and garam masala. Cook for 2 minutes.
    • Mix in the mashed potatoes and stir-fry for an additional 2 minutes.
    • Remove the filling from the heat and allow it to cool.
  3. Assembly:

    • Divide the dough into 10 equal portions.
    • Using a rolling pin, roll each portion into a 5-inch oval.
    • Cut each oval in half to form two semi-circles.
    • Moisten the straight edge of each semi-circle with water.
    • Roll each semi-circle into a cone shape, sealing the moistened edge.
    • Fill each cone with a tablespoon of the prepared filling.
    • Seal the open end of each cone by pressing it together with moistened fingers.
  4. Frying:

    • Heat oil in a deep frying pan over low to medium heat.
    • Carefully place the stuffed samosas into the hot oil.
    • Fry until they turn light brown and crispy on all sides, flipping occasionally.
    • Once cooked, remove the samosas from the oil and drain them on paper towels to remove excess oil.
  5. Serving:

    • Serve the freshly fried samosas hot with your favorite dipping sauce, such as tomato sauce or any chutney of your choice.
