Ingredients:
- 1 clove garlic
- 1 onion
- 3-4 pieces chicken, diced
- 6 pieces pork, diced
- 2 slices ham, diced
- 1/2 head cabbage, shredded
- 1 cup light soy sauce
- 1 lemon wedge
- For the noodles:
- Noodles of your choice
- For garnish:
- Reserved meats
- Lemon wedges

Prepare the Prawns:
- Bring some water to a boil in a saucepan and immerse the prawns for 1-2 minutes until they turn pink.
- Save 1 cup of the prawn stock.
- Dash the prawns in cold water, peel, and devein them. If they are large, cut them into 3 pieces.

Cook the Noodles:
- Soak the noodles in warm water, then drain them.
- Bring a large pot of water to a rolling boil.
- Cook the noodles for 2 minutes or until just tender (do not overcook).
- Drain the noodles and place them on a large baking sheet lined with parchment paper. Spread them out and allow them to dry for at least 30 minutes. Spray with a little oil.

Fry the Noodles:
- Meanwhile, heat the oil in a large wok or skillet. When very hot, fry the noodles a few at a time until golden. Remove them as they are done and keep them warm.

Prepare the Meats and Vegetables:
- If necessary, add a bit more oil to the wok or skillet. Fry the garlic, onion, prawns, chicken, pork, and ham (set aside a bit of the meats to garnish the finished dish).
- Add the shredded cabbage, soy sauce, prawn stock, salt, and pepper.
- Cook uncovered until the liquid has all but evaporated.

- Add the fried noodles to the wok and heat through.
- Place the cooked pancit guisado on a platter and garnish with the reserved meats and wedges of lemon.
