Ingredients:

  • 1 clove garlic
  • 1 onion
  • 3-4 pieces chicken, diced
  • 6 pieces pork, diced
  • 2 slices ham, diced
  • 1/2 head cabbage, shredded
  • 1 cup light soy sauce
  • 1 lemon wedge
  • For the noodles:
    • Noodles of your choice
  • For garnish:
    • Reserved meats
    • Lemon wedges

Instructions:

  1. Prepare the Prawns:

    • Bring some water to a boil in a saucepan and immerse the prawns for 1-2 minutes until they turn pink.
    • Save 1 cup of the prawn stock.
    • Dash the prawns in cold water, peel, and devein them. If they are large, cut them into 3 pieces.
  2. Cook the Noodles:

    • Soak the noodles in warm water, then drain them.
    • Bring a large pot of water to a rolling boil.
    • Cook the noodles for 2 minutes or until just tender (do not overcook).
    • Drain the noodles and place them on a large baking sheet lined with parchment paper. Spread them out and allow them to dry for at least 30 minutes. Spray with a little oil.
  3. Fry the Noodles:

    • Meanwhile, heat the oil in a large wok or skillet. When very hot, fry the noodles a few at a time until golden. Remove them as they are done and keep them warm.
  4. Prepare the Meats and Vegetables:

    • If necessary, add a bit more oil to the wok or skillet. Fry the garlic, onion, prawns, chicken, pork, and ham (set aside a bit of the meats to garnish the finished dish).
    • Add the shredded cabbage, soy sauce, prawn stock, salt, and pepper.
    • Cook uncovered until the liquid has all but evaporated.
  5. Combine and Serve:

    • Add the fried noodles to the wok and heat through.
    • Place the cooked pancit guisado on a platter and garnish with the reserved meats and wedges of lemon.

Enjoy your flavorful Philippine Pancit Guisado, a satisfying meal that’s sure to please your taste buds! ๐ŸŽ‰
