Ingredients:

  • 4 cups peanuts (with skin)
  • 1/4 cup ghee (clarified butter)
  • 1 1/2 cups jaggery

Instructions:

  1. Prepare Peanuts: In a large kadai or deep frying pan, melt ghee over medium heat. Add peanuts with their skins on and stir continuously using a spatula.

  2. Roast Peanuts: Continue stirring until the peanuts start turning reddish. To check if they’re done, press one peanut with your thumb to see if the skin can be easily removed. Once ready, remove the peanuts from heat.

  3. Remove Peanut Skins: Transfer the roasted peanuts to a plate and rub them gently to remove the skins. Set aside.

  4. Prepare Jaggery Mixture: Slice the coconut into small, thin square pieces. In another kadai, combine jaggery with 1/2 cup of water and add the coconut pieces. Keep an additional cup of water handy.

  5. Boil Jaggery Mixture: Heat the jaggery mixture until it boils and starts thickening. To test its consistency, add a teaspoon of the mixture to the cup of water. The jaggery should not dissolve in the water and should form a soft ball when rolled.

  6. Add Flavor: Once the jaggery reaches the desired consistency, add cardamom powder for flavor.

  7. Mix Peanuts and Jaggery: Place the cleaned peanuts in a broad plate and pour the jaggery mixture over them gradually, using a ladle. Mix them evenly using a thin-edged spatula.

  8. Shape Candy: While the mixture is still hot, shape it into lemon-sized balls using your hands. Periodically dip your hands in water or rice flour to prevent sticking.

  9. Allow Cooling: As the peanut balls cool down, they will start to harden.

  10. Variation: Alternatively, you can pour the peanut-jaggery mixture into different molds and cut them into small pieces once set.

  11. Garnish: For an added touch, garnish the candy with dried grated coconut dipped in various food colors.
