Instructions:

Prepare the Dough:
- Place all the above ingredients into the bread machine.
- Select the ‘dough’ cycle and let it run.

Knead and Shape:
- After 40 minutes of mixing, stop the bread machine (about 1 hour and 10 minutes into the dough cycle).
- Tip the bagel dough out onto a lightly floured surface.
- Gently knead the dough by hand for about 1 minute.

Shape the Bagels:
- Cut the dough into 8 equal pieces.
- Roll and gently massage each piece into a snake-like shape.
- Dampen and overlap the ends, pressing firmly to form a ring.

Prep for Boiling:
- Place each bagel ring on an individual piece of baking paper, lightly sprayed with oil.
- Cover all the rings with another sheet of baking paper and allow them to rest.

Boil the Bagels:
- Meanwhile, bring a large pan of water to a boil.
- Carefully lower each bagel into the boiling water (about 4 at a time), sliding the paper away from each ring.
- Gently turn the bagels, allowing about 40 seconds on each side.
- Lift the bagels out and drain them on absorbent paper towels.

Finish and Bake:
- Preheat your oven to 220°C (Gas mark 7).
- Place the drained bagels on a baking tray lined with parchment paper.
- Brush each bagel with a mixture of lightly beaten egg, 1 tablespoon of water, and 1/2 teaspoon of salt.
- Sprinkle generously with poppy seeds or toasted sesame seeds.
- Bake in the preheated oven for about 15 minutes or until they achieve a nice deep golden brown color.
- Remove the bagels from the oven and transfer them to a wire rack to cool.
