Passed down through generations of bagel lovers, this recipe guarantees satisfaction. Enjoy them warm with a spread of Philadelphia Cream Cheese, smoked salmon, a squeeze of lemon, and freshly ground black pepper for a gourmet treat. They’re equally delightful for breakfast, toasted and topped with Philadelphia Cream Cheese and raspberry jam!

Ingredients:

Quantity Ingredient
3 cups All-purpose flour
2 cups Whole wheat flour
1 cup Gluten flour
2 tsp Salt
1 1/2 tbsp Honey
2 cups Water
1 1/4 cups Water

Instructions:

  1. Prepare the Dough:

    • Place all the above ingredients into the bread machine.
    • Select the ‘dough’ cycle and let it run.
  2. Knead and Shape:

    • After 40 minutes of mixing, stop the bread machine (about 1 hour and 10 minutes into the dough cycle).
    • Tip the bagel dough out onto a lightly floured surface.
    • Gently knead the dough by hand for about 1 minute.
  3. Shape the Bagels:

    • Cut the dough into 8 equal pieces.
    • Roll and gently massage each piece into a snake-like shape.
    • Dampen and overlap the ends, pressing firmly to form a ring.
  4. Prep for Boiling:

    • Place each bagel ring on an individual piece of baking paper, lightly sprayed with oil.
    • Cover all the rings with another sheet of baking paper and allow them to rest.
  5. Boil the Bagels:

    • Meanwhile, bring a large pan of water to a boil.
    • Carefully lower each bagel into the boiling water (about 4 at a time), sliding the paper away from each ring.
    • Gently turn the bagels, allowing about 40 seconds on each side.
    • Lift the bagels out and drain them on absorbent paper towels.
  6. Finish and Bake:

    • Preheat your oven to 220°C (Gas mark 7).
    • Place the drained bagels on a baking tray lined with parchment paper.
    • Brush each bagel with a mixture of lightly beaten egg, 1 tablespoon of water, and 1/2 teaspoon of salt.
    • Sprinkle generously with poppy seeds or toasted sesame seeds.
    • Bake in the preheated oven for about 15 minutes or until they achieve a nice deep golden brown color.
    • Remove the bagels from the oven and transfer them to a wire rack to cool.
