Ingredients:

  • 250g pasta
  • 1/2 onion, chopped
  • 4 tbsp butter
  • 4 tbsp cornflour
  • Salt, pepper, and cayenne pepper to taste
  • 500-750ml milk
  • 200g cheddar cheese, cubed
  • 1 can tuna in brine
  • 1 can tuna in water
  • 1/2 cup frozen corn kernels
  • 1 lemon, juiced
  • 1 1/2 cups grated cheddar cheese (divided)
  • Bread crumbs

Instructions:

Step Description
1 Boil water and cook pasta according to packet instructions.
2 Add chopped onion to pasta water while pasta cooks.
3 Drain well.
4 In a saucepan, melt butter over low heat.
5 Add flour and whisk to form a roux off the heat.
6 Season roux with salt, pepper, and cayenne pepper.
7 Return saucepan to heat and gradually add milk, stirring constantly until the white sauce thickens.
8 Remove from heat and add cubed cheddar cheese, stirring until melted.
9 Mix in tuna, peas, corn, and lemon juice until combined.
10 Set aside.
11 Preheat oven to 200°C (390°F).
12 In a casserole dish, combine cooked pasta and white sauce mixture, stirring gently to coat the pasta evenly.
13 Top the casserole with most of the grated cheddar cheese, then sprinkle breadcrumbs over the cheese.
14 Cover breadcrumbs with the remaining grated cheddar cheese.
15 Season the top of the casserole with salt and pepper.
16 Bake the casserole in the preheated oven for 20 minutes, or until the cheese is melted and golden.
17 Serve hot and enjoy the delicious flavors!
