Description:
The more caramelized onions, the better, I say!! This dish offers a delightful twist with Fontina cheese, a departure from the usual Parmesan. Pair it with a colorful veggie and a small salad, and dinner is served!
Ingredients:
- 1 large onion
- 4 tablespoons olive oil
- 1/2 teaspoon dried sage
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 red pepper, diced
- 1/2 cup vegetable stock
- 400 grams penne pasta
- 200 grams Fontina cheese, shredded
- 1/4 cup chopped flat-leaf parsley
Instructions:
Step | Description |

1 | Heat olive oil in a large non-stick skillet over medium-high heat. |
2 | Add the onions and cook, stirring often, for about 5 minutes until softened. |
3 | Reduce the heat to medium and add the dried sage, salt, and black pepper to the onions. Continue cooking, stirring occasionally, for approximately 20 minutes, or until the onions are golden brown and caramelized. |
4 | Stir in the diced red pepper and vegetable stock, ensuring all ingredients are well combined. |
5 | While the onions are caramelizing, cook the penne pasta in a pot of salted boiling water for 8 to 10 minutes, or until al dente. |
6 | Drain the cooked pasta and return it to the cooking pot. |
7 | Add the caramelized onion mixture to the pasta and toss to coat the pasta evenly. |
8 | Sprinkle the shredded Fontina cheese and chopped parsley over the pasta and onions, then toss again to ensure the cheese is evenly distributed and melted. |
