Ingredients:

  • Giblets from turkey
  • 6 cups water
  • 3 1/2 cups reduced-sodium chicken broth
  • 2 carrots
  • 1 onion
  • 1 celery stalk
  • 1 bay leaf
  • 5 tablespoons butter
  • 5 tablespoons all-purpose flour
  • Cream (quantity as desired)
  • Salt and pepper to taste

Instructions:

1 While your turkey cooks, place giblets in a large saucepan.
2 Add 6 cups of water, 3 1/2 cups of chicken broth, carrots, onion, celery, and bay leaf to the saucepan.

5 Chop the giblets and set them aside.
6 In a large, heavy saucepan, melt 5 tablespoons of butter over medium heat.
7 Add 5 tablespoons of flour and whisk for 2 minutes.
8 Gradually add the turkey stock, cream, and up to 1 cup of turkey pan juices.
9 Simmer the gravy until it reaches the desired consistency, whisking occasionally.
10 Add the chopped giblets to the gravy.
11 Season to taste with salt and pepper.
