Ingredients:

Quantity Ingredient
500g Frozen spinach
125g Feta cheese
125g Ricotta cheese
1 Egg
15g Butter
1 Onion
1 Bunch of fresh mint
1 Bunch of fresh parsley
4 Puff pastry sheets
Milk
Salt and pepper

Instructions:

  1. Prepare the Filling:

    • In a mixing bowl, combine the frozen spinach (thawed and drained), crumbled feta cheese, ricotta cheese, and beaten egg. Stir until well combined.
  2. Sauté the Onion:

    • In a skillet, melt the butter over medium heat. Add the finely chopped onion and sauté until soft and translucent.
  3. Incorporate into Filling:

    • Add the sautéed onion to the spinach and cheese mixture. Season generously with salt and pepper to taste. Mix well to incorporate all the flavors.
  4. Assemble the Pies:

    • Preheat your oven to 200°C (390°F).
    • Take two pie pans and line the bottom of each with a sheet of puff pastry.
    • Divide the spinach and cheese filling evenly between the two pie pans, spreading it out evenly.
    • Cover the filling in each pie pan with another sheet of puff pastry. Seal the edges by pressing them together with a little water, creating a crust.
  5. Brush with Milk:

    • Brush the top of each pie with a little milk. This will help to achieve a golden brown crust when baked.
  6. Bake:

    • Place the assembled pies in the preheated oven and bake for 25 to 30 minutes, or until the pastry is golden brown and crisp.
  7. Serve and Enjoy:

    • Once baked, remove the pies from the oven and allow them to cool slightly before slicing and serving. Enjoy the delicious flavors of spinach and feta in every bite!

Storage Tip: These pies can be stored in the freezer for up to 1 month, making them a convenient option for meal prep or quick weeknight dinners. Simply allow them to cool completely before wrapping them tightly in aluminum foil and placing them in the freezer. To reheat, simply thaw in the refrigerator overnight and warm in the oven until heated through.
