Ingredients:

  • 1 eggplant
  • 2 lbs ground turkey
  • 2 onions
  • 1 can diced tomatoes
  • 2 garlic cloves

Instructions:

  1. Preheat Oven: Preheat your oven to 375°F (190°C).

  2. Prepare Eggplant: Slice the eggplant into rounds. Heat olive oil in a skillet over medium heat. Add the eggplant slices and sauté for about 5 minutes on each side, until they are golden brown. Remove the eggplant from the skillet and set aside.

  3. Cook Turkey Mixture: In the same skillet, add the ground turkey and diced onions. Cook, stirring occasionally, until the turkey is browned and the onions are translucent. Drain any excess grease from the skillet.
