Cornmeal-Pumpkin Dessert Soufflés

Ingredients:

Quantity Ingredient
2 cups 1% low-fat milk
1/2 cup sugar
6 tbsp granulated sugar
1 orange zest
1/2 cup yellow cornmeal
2/3 cup canned pumpkin puree
1/4 tsp ground nutmeg
4 eggs
1/4 tsp salt
To taste confectioners’ sugar for dusting

Instructions:

  1. Prepare the Soufflé Base:

    • In a large heavy saucepan, combine the milk, 1/4 cup sugar, and orange zest.
    • Bring the mixture to a simmer over medium heat.
    • Discard the orange zest once simmering.
    • While whisking constantly, add the cornmeal in a thin, steady stream.
    • Cook, whisking, until the mixture thickens, about 2 minutes.
    • Whisk in the pumpkin puree and nutmeg.
    • Simmer, stirring constantly, until very thick, about 10 minutes.
    • Transfer the mixture into a large mixing bowl.
    • Place a sheet of plastic wrap directly over the surface.
    • Let the mixture cool to room temperature, about 45 minutes.
  2. Prepare the Soufflé Dishes:

    • Preheat the oven to 400°F (200°C).
    • Lightly oil six 8-ounce soufflé dishes or ramekins or coat them with nonstick spray.
    • Coat the inside of each dish with 1 teaspoon sugar, tapping out the excess.
    • Line a small roasting pan with a folded kitchen towel.
    • Put a large kettle of water on to boil.
  3. Whip the Egg Whites:

    • In a large mixing bowl, combine egg whites and salt.
    • Beat with an electric mixer at high speed until foamy and opaque, forming very soft peaks.
    • Add the remaining 1/4 cup sugar, 1 tablespoon at a time, beating constantly until slightly firm peaks form.
  4. Combine and Bake:

    • Whisk one-fourth of the egg whites into the pumpkin mixture until smooth.
    • With a rubber spatula, gently fold in the remaining whites.
    • Divide the mixture among the prepared dishes.
    • Place the dishes in the prepared pan.
    • Pour in enough boiling water to come halfway up the sides of the dishes.
    • Bake for 25 to 35 minutes, or until well risen and golden.
    • Remove from the pan and dust with confectioners’ sugar.
    • Serve immediately.
