Description:
This zucchini bread recipe is a household favorite! Even without cinnamon, it bursts with incredible flavor. With yields of 2-2 1/2″ thick loaves, totaling approximately 18 slices per loaf, it’s perfect for feeding a crowd or storing for later indulgence.
Ingredients:
- 2 1/2 cups sugar
- 3 eggs
- 2 cups white flour
- 2 cups wheat flour
- 2 cups shredded zucchini
- 1/4 cup applesauce
- 3/4 tablespoon baking powder
- 1/4 tablespoon salt
- 1/4 tablespoon baking soda
- 1 tablespoon cinnamon
- 1 tablespoon vanilla extract
Instructions:

Prepare Dry Ingredients:
- In a large bowl, sift together the white flour, wheat flour, baking powder, baking soda, salt, and cinnamon. Set aside.

- In another bowl, beat together the eggs and sugar until well combined.
- Add the oil and applesauce to the egg mixture and mix thoroughly.

- Stir in the shredded zucchini and vanilla extract until evenly distributed.

- Gradually fold the dry ingredients into the wet mixture until just combined. Be careful not to overmix.
