Ingredients:

250g Pasta
500g Mushrooms
15g Dried mushrooms
2 Shallots
2 Tomato puree
1 Bunch parsley
2 cups Milk
600g Cheese
2 tbsp Butter
2 tbsp Flour
1/2 tsp Seasoning

Instructions:

  1. Soak the Dried Mushrooms:

    • In a bowl, soak the dried mushrooms in 300ml hot water for 30 minutes.
    • After soaking, drain the mushrooms, but be sure to strain and preserve the soaking liquid.
  2. Preheat Oven:

    • Preheat your oven to 200°C (390°F) to ensure it’s ready when needed.
  3. Prepare Mushroom Mixture:

    • Heat oil in a pan over medium heat, then add the shallots and fry until soft.
    • Stir in the dried mushrooms, reserved soaking liquid, tomato puree, chopped parsley, and seasoning.
    • Allow the mixture to simmer gently for about 15 minutes.
  4. Add Fresh Mushrooms:

    • After the mixture has simmered, add the fresh mushrooms to the pan and continue cooking for an additional 5 minutes.
  5. Prepare Cheese Sauce:

    • While the mushroom mixture is simmering, warm the milk in a separate saucepan.
    • In another saucepan, melt the butter over medium heat, then add the flour and cook for about a minute.
    • Gradually whisk in the warmed milk until the sauce is smooth and thick.
    • Season the sauce to taste with additional seasoning if desired.
  6. Assemble the Pasta Dish:

    • Butter a shallow oblong baking dish.
    • Layer the ingredients in the following order: sauce, pasta, mushrooms, pasta, mushrooms, pasta, sauce.
    • Sprinkle grated cheese over each layer, ensuring even coverage.
  7. Bake:

    • Place the assembled pasta dish in the preheated oven and bake for 15 to 20 minutes, or until the top is golden brown and bubbling.
