Ingredients:

  • 1/3 cup all-purpose flour
  • 3 1/2 pounds chicken legs
  • 3 tablespoons margarine
  • 1 onion
  • 1 red sweet bell pepper
  • 1 cup water
  • 1 tablespoon paprika
  • 1 cup sour cream
  • 1 1/2 teaspoons pepper
  • 12 ounces egg noodles
  • 8 tablespoons margarine
  • 1/4 cup breadcrumbs

Instructions:

  1. Preparation: Begin by melting 3 tablespoons of margarine in a large skillet over medium heat.

  2. Coating Chicken: In a gallon-size zipper bag, dump in the all-purpose flour. Add one chicken leg quarter at a time into the bag and shake to coat evenly. If you’re using smaller chicken pieces, you can coat 2 or 3 at a time.

  3. Browning Chicken: Add the coated chicken pieces to the skillet. Cook them over medium-high heat for about 10 minutes, turning once, to brown them on each side.

  4. Preparing Sauce: While the chicken is browning, chop the onion and bell pepper. Mix the envelope of gravy mix with 1 cup of water and the paprika.

  5. Adding Vegetables and Sauce: Add the chopped onion and bell pepper to the skillet. Pour the prepared gravy mixture over all the ingredients.

  6. Simmering: Cover the skillet and reduce the heat to medium-low. Cook for about 45-50 minutes for leg quarters and 35-40 minutes for smaller pieces. Make sure to test for doneness by piercing the chicken with a fork; the juices that run out should be clear.

  7. Cooking Noodles: While the chicken is cooking, prepare the egg noodles in a large pot according to package directions. Drain the water and return the noodles to the pot, covering to keep them warm.

  8. Preparing Topping: In a separate skillet, melt 8 tablespoons of margarine. Add the breadcrumbs and toast them until golden brown.

  9. Finishing Sauce: When the chicken is done, remove it from the skillet and place it on a large plate. Skim the oil off the top of the gravy and discard it. Stir the sour cream and pepper into the gravy until smooth. Place the chicken back in the skillet and cover to heat through at low temperature, taking care not to boil.

  10. Serving: Serve the chicken over the egg noodles, spooning on some extra sauce. Sprinkle the breadcrumb topping to your liking. Enjoy your delicious Skillet Chicken Paprikash and say it with me now, “PAH-PREE-KOSH!”
