Ingredients:
- 14 chicken wings
- 1 teaspoon fine salt
- 1 liter cold water
- 1/2 pot of raw water (for boiling)
- 900 ml water
Seasonings:
- 4 shallots (crushed)
- 4 slices ginger
- 4 tablespoons rock sugar
- 2 tablespoons soy sauce
- 1.5 tablespoons dark soy sauce
- 1 teaspoon salt
- 2 star anise
- 1 sprig coriander leaves (I used 1 due to availability)
Steps:

Rub chicken wings with fine salt. Rinse thoroughly, then boil in 1/2 pot of water until boiling. Add chicken wings and boil for 30 seconds. Remove and soak wings in ice water for 10 minutes. Drain.

Wash star anise and coriander leaves, then drain.

Boil 900 ml water, add seasoning ingredients. Once boiling, add chicken wings. Boil wings for 4 minutes. Remove from heat.

Boil seasoning liquid for another 8 minutes to thicken.

Return chicken wings to the pot, reduce heat. Simmer for another 4 minutes, watching carefully to avoid burning. Turn off the heat. Let sit briefly, then serve.
