Ingredients
- 2 eggplants
- 1 tablespoon tamarind paste
- 1 onion
- 3 cloves garlic
- 1-inch ginger
- 1 green chili
- 1 tablespoon coriander powder
- 1 teaspoon salt
- 2 teaspoons turmeric
- 1/2 teaspoon red chili powder
- 1/2 cup chopped cilantro
- 1 tablespoon poppy seeds
- 1 tablespoon sesame seeds
- 1 tablespoon coconut flakes
Instructions

Prepare the Eggplants:
- Start by removing the stem from the eggplants and rinsing them thoroughly.
- Make a lengthwise slit in each eggplant, being careful not to cut all the way through.

Prepare the Stuffing:
- In a pan over medium heat, sauté the minced garlic and chopped onion in 1 tablespoon of oil until translucent and fragrant.
- While stirring, add the remaining spices: ginger, green chili, coriander powder, salt, turmeric, red chili powder, chopped cilantro, poppy seeds, sesame seeds, and coconut flakes.
- Mix the tamarind paste with some warm water to create a thick consistency that you can stuff into the eggplants.

- Fill each eggplant through the slit with the prepared stuffing mixture. Press gently to ensure it’s evenly distributed.

- Heat the remaining oil in a wide skillet over low to medium heat.
- Arrange the stuffed eggplants in a single layer in the skillet, turning them gently with a spatula to ensure they cook evenly on all sides.
- Add a little water to the skillet as needed to prevent sticking and to create steam for cooking.
- Cook the stuffed eggplants until they are tender and cooked through, about 25-30 minutes.
