Ingredients

  • 2 eggplants
  • 1 tablespoon tamarind paste
  • 1 onion
  • 3 cloves garlic
  • 1-inch ginger
  • 1 green chili
  • 1 tablespoon coriander powder
  • 1 teaspoon salt
  • 2 teaspoons turmeric
  • 1/2 teaspoon red chili powder
  • 1/2 cup chopped cilantro
  • 1 tablespoon poppy seeds
  • 1 tablespoon sesame seeds
  • 1 tablespoon coconut flakes

Instructions

  1. Prepare the Eggplants:

    • Start by removing the stem from the eggplants and rinsing them thoroughly.
    • Make a lengthwise slit in each eggplant, being careful not to cut all the way through.
  2. Prepare the Stuffing:

    • In a pan over medium heat, sauté the minced garlic and chopped onion in 1 tablespoon of oil until translucent and fragrant.
    • While stirring, add the remaining spices: ginger, green chili, coriander powder, salt, turmeric, red chili powder, chopped cilantro, poppy seeds, sesame seeds, and coconut flakes.
    • Mix the tamarind paste with some warm water to create a thick consistency that you can stuff into the eggplants.
  3. Stuff the Eggplants:

    • Fill each eggplant through the slit with the prepared stuffing mixture. Press gently to ensure it’s evenly distributed.
  4. Cook the Stuffed Eggplants:

    • Heat the remaining oil in a wide skillet over low to medium heat.
    • Arrange the stuffed eggplants in a single layer in the skillet, turning them gently with a spatula to ensure they cook evenly on all sides.
    • Add a little water to the skillet as needed to prevent sticking and to create steam for cooking.
    • Cook the stuffed eggplants until they are tender and cooked through, about 25-30 minutes.
  5. Serve:

    • Once the stuffed eggplants are cooked, transfer them to a serving dish.
    • Pour any leftover masala from the skillet over the eggplants for extra flavor.
    • Garnish with additional chopped cilantro, if desired, and serve hot with your favorite side dishes.
