Shrimp and Tofu in Yellow Spice Sauce (Udang dan Tahu Bumbu Kuning)

Ingredients

Ingredients Quantity
Shrimp (peeled and cleaned) 250 grams
White tofu, diced into small cubes 5 pieces
Quail eggs (boiled and peeled) 10 pieces
Bay leaves 3 leaves
Salt To taste
Sugar To taste
Ground pepper To taste
Cooking oil For sautéing and frying

Spice Paste (Blended Ingredients)

Garlic cloves 4 cloves
Shallots 3 cloves
Fresh ginger 1 thumb-sized piece
Fresh turmeric 1 thumb-sized piece
Candlenuts (kemiri) 2 pieces

Instructions

  1. Prepare the Tofu
    Heat some cooking oil in a frying pan. Fry the diced tofu until golden brown and crispy on the outside. Once done, remove the tofu and let it drain on a paper towel to absorb any excess oil.

  2. Prepare the Spice Paste
    In a blender or food processor, blend the garlic, shallots, ginger, turmeric, and candlenuts until smooth. This mixture will serve as the aromatic base for your dish.

  3. Cook the Aromatics
    In the same pan, add 3 tablespoons of oil and heat over medium heat. Add the blended spice paste along with the bay leaves, and sauté until fragrant. Stir continuously to prevent the paste from burning, and cook until the raw smell of the spices is gone.

  4. Cook the Shrimp
    Add the cleaned shrimp to the pan, stirring it into the fragrant spice mixture. Cook until the shrimp turns pink and opaque, indicating that it is fully cooked.

  5. Add Quail Eggs and Tofu
    Once the shrimp is cooked, add the boiled quail eggs and fried tofu to the pan. Stir everything together, ensuring the tofu and eggs are well coated with the spice mixture.

  6. Season and Simmer
    Season the dish with salt, sugar, and ground pepper to taste. Add a small amount of water if needed to help the spices infuse into the tofu and eggs. Stir gently and let the mixture simmer for about 5-10 minutes, allowing the flavors to meld together.

  7. Serve
    Once the spices are well absorbed and the sauce has slightly thickened, remove the dish from heat. Serve the Shrimp and Tofu in Yellow Spice Sauce hot with steamed rice for a flavorful and hearty meal.
