Homemade Texas Chips With Guacamole Spread Recipe

Ingredients:

  • 2 cups biscuit mix
  • 1/2 cup water
  • 1/2 cup cornmeal
  • 1 avocado
  • 1 lime (juiced)
  • 1 1/2 cups mayonnaise
  • 1 1/2 tablespoons canned green chilies
  • 1 1/2 tablespoons finely chopped onion
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon ground cumin
  • 1/2 cup diced tomatoes
  • 1/8 teaspoon minced garlic clove
  • 1/8 cup bacon bits

Instructions:

  1. Prepare the Chips:

    • In a mixing bowl, combine biscuit mix and water, stirring just until blended.
    • Turn the dough out onto a lightly floured surface and knead lightly 3 or 4 times.
    • Divide the dough into 16 pieces and shape each piece into a ball.
    • Sprinkle the surface with cornmeal and roll each ball into a 5-inch circle.
  2. Fry the Chips:

    • Heat oil in a Dutch oven to 375°F (190°C).
    • Carefully drop the rolled dough, two pieces at a time, into the hot oil.
    • Cook for about 15 seconds on each side until puffed and golden.
    • Drain the fried chips on paper towels to remove excess oil.
  3. Prepare the Guacamole Spread:

    • In a separate bowl, combine the avocado (mashed), lime juice, mayonnaise, green chilies, chopped onion, Worcestershire sauce, ground cumin, diced tomatoes, minced garlic clove, and bacon bits.
    • Stir until all ingredients are well blended.
  4. Serve:

    • Serve the warm Texas chips with the prepared Guacamole Spread.
