Ingredients

2 1/4 cups Granola cereal
3 cups All-purpose flour
3/4 tsp Salt
1 cup Unsalted butter
1 cup Powdered sugar
1 Egg
1 Egg yolk
1 cup Grape jelly

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a 13x9x2 inch baking pan by spraying it with non-stick cooking spray.
  2. Finely crush 1 1/2 cups of the granola cereal and set aside.
  3. In a large mixing bowl, whisk together 2 1/2 cups of flour, the salt, and the crushed granola until well combined.
  4. In another large bowl, beat the softened butter and powdered sugar together until smooth and creamy.
  5. Add the whole egg and the egg yolk to the butter mixture, beating well after each addition to ensure a light and fluffy texture.
  6. Gradually stir in the flour mixture until the dough forms, noting that it will be quite stiff.
  7. Set aside 3/4 cup of this dough for later use.
  8. Press the remaining dough evenly over the bottom of the prepared pan and up about 1/2 inch along the sides.
  9. Bake the crust in the preheated oven for 10 minutes, until lightly golden.
  10. While the crust is baking, stir the grape jelly in a small bowl until smooth and spreadable.
  11. Once the crust is done, remove it from the oven and evenly spread the jelly over the hot crust.
  12. Combine the reserved 3/4 cup of dough with the remaining 3/4 cup of granola and 1/2 cup of flour, mixing well and breaking it into loose crumbs.
  13. Sprinkle this crumb mixture over the jelly layer in the pan.
  14. Return the pan to the oven and bake for an additional 18 minutes or until the jelly is bubbly and the topping is lightly golden.
  15. Allow the bars to cool completely on a wire rack before slicing them into squares.
