Instructions
- Preheat your oven to 375°F (190°C) and prepare a 13x9x2 inch baking pan by spraying it with non-stick cooking spray.
- Finely crush 1 1/2 cups of the granola cereal and set aside.
- In a large mixing bowl, whisk together 2 1/2 cups of flour, the salt, and the crushed granola until well combined.
- In another large bowl, beat the softened butter and powdered sugar together until smooth and creamy.
- Add the whole egg and the egg yolk to the butter mixture, beating well after each addition to ensure a light and fluffy texture.
- Gradually stir in the flour mixture until the dough forms, noting that it will be quite stiff.
- Set aside 3/4 cup of this dough for later use.
- Press the remaining dough evenly over the bottom of the prepared pan and up about 1/2 inch along the sides.
- Bake the crust in the preheated oven for 10 minutes, until lightly golden.
- While the crust is baking, stir the grape jelly in a small bowl until smooth and spreadable.
- Once the crust is done, remove it from the oven and evenly spread the jelly over the hot crust.
- Combine the reserved 3/4 cup of dough with the remaining 3/4 cup of granola and 1/2 cup of flour, mixing well and breaking it into loose crumbs.
- Sprinkle this crumb mixture over the jelly layer in the pan.
- Return the pan to the oven and bake for an additional 18 minutes or until the jelly is bubbly and the topping is lightly golden.
- Allow the bars to cool completely on a wire rack before slicing them into squares.
