Cayenne pepper To taste
Shallots 2
Red bell peppers 1
Grapefruit (juice) From 2

Instructions:

  1. Prepare Grapefruit:

    • Peel and section the grapefruit, saving the juice that accumulates. Combine it with orange and grapefruit juice.
  2. Cook Sole:

    • Heat butter in a non-stick skillet over medium heat.
    • Season sole fillets with salt, pepper, and cayenne to taste.
    • Add sole fillets to the skillet and cook for about 3 minutes on each side, turning them carefully.
    • Remove from the skillet when the fillets are springy to the touch, and keep them warm.
  3. Saute Shallots and Bell Pepper:

    • In the same skillet, add shallots and bell pepper. Cook until the shallots soften, about 3 minutes.

    • Bring the mixture to a boil and let it reduce for a minute or two.
