Sayur Buncis Tempe Cabe Hijau (Green Bean and Tempeh Stir-Fry with Green Chilies)

This vibrant and flavorful Indonesian dish combines fresh green beans, tempeh, and aromatic spices with a creamy coconut infusion. It’s a perfect side dish or light main course, offering a wonderful blend of textures and tastes that will leave your taste buds tingling. Simple yet rich in flavor, this dish is ideal for both everyday meals and special occasions. Let’s take a closer look at the ingredients and preparation steps.

Ingredients:

Ingredients Amount
Green beans (sliced on the diagonal) 200g
Tempeh (cut into cubes) 150g (about half a block)
Kara coconut milk block (or any coconut milk) 1/2 block
Dried shrimp (optional, soaked in hot water and drained) 1 tbsp (optional)
Galangal (smashed) 1 thumb-sized piece
Bay leaves (medium size) 2 leaves
Sliced spices:
Shallots 6 cloves
Garlic 4 cloves
Green chilies (sliced) 8 pieces
Salt, sugar, and powdered stock To taste (I used beef broth)

Instructions:

  1. Sauté the Spices:
Heat a little oil in a pan, then sauté the sliced shallots, garlic, and green chilies until fragrant. The aroma of the sautéed spices should fill your kitchen with an inviting scent.

  2. Add the Green Beans, Tempeh, and Aromatics:
Next, add the sliced green beans and cubed tempeh to the pan. Toss them well with the sautéed spices. If you’re using dried shrimp (ebi), add them now along with the smashed galangal, bay leaves, and other aromatic ingredients like the petai (optional). Stir everything together until the vegetables and tempeh are halfway cooked.

  3. Simmer with Coconut Milk:
Add enough water to the pan to create a light broth, then pour in the Kara coconut milk. Let it simmer, allowing the flavors to meld together. Adjust the seasoning by adding salt, sugar, and beef broth powder to taste.

  4. Final Adjustments:
Taste and adjust the seasoning to suit your preference. Once everything is cooked through and the sauce has thickened slightly, remove from heat.

  5. Serve and Enjoy:
Serve this delicious stir-fry hot with steamed rice, and enjoy the harmony of textures and flavors in each bite.
