How Green Is My Casserole 🌿🍀

Description

Although lima beans and peas might not be my personal favorites, this green vegetable casserole is a true potluck crowd-pleaser. I first encountered it at a St. Paddy’s Day celebration and was intrigued by its popularity. Despite my aversion to some of the ingredients, I found the taste surprisingly good, sans lima beans in my portion. With its vibrant green hues, this dish is perfect for celebrating St. Patrick’s Day, making it a timely addition to your recipe collection. The name “How Green Is My Casserole” brings a touch of whimsy to what was originally known as “Green Vegetable Casserole.”

Instructions 🍲

  1. Preparation: Preheat your oven to 350°F (175°C). Prepare an 8-inch casserole dish by lightly spraying it with nonstick cooking spray. 🌟

  2. Cook the Vegetables: Cook each frozen vegetable separately, following the package instructions. The original cook recommended microwaving them and slightly undercooking to maintain some crunch. Once cooked, drain well and set aside. 🥕🥒

  3. Prepare the Green Pepper: Thinly slice the green bell pepper and set aside. 🌿

  4. Make the Sauce: In a mixing bowl, blend together the softened cream cheese, mayonnaise, and milk until a smooth, thin sauce forms. 🥛🧀

  5. Layer the Casserole:

    • Start by placing the lima beans at the bottom of the casserole dish.
    • Add 1/3 of the green pepper slices on top.
    • Follow with a layer of green beans.
    • Add another 1/3 of the green pepper slices.
    • Top with the green peas.
    • Finish with the remaining green pepper slices. 🥬🌽
  6. Add the Sauce and Toppings: Pour the cream cheese sauce evenly over the layered vegetables. Sprinkle grated parmesan cheese on top, followed by a light dusting of paprika for a pop of color. 🌶️🧀

  7. Bake: Place the casserole in the preheated oven and bake for 20 minutes, or until the top is golden and the sauce is bubbly. 🍽️🔥

  8. Serve: Let the casserole cool slightly before serving. Enjoy this vibrant and cheesy dish that’s perfect for any festive occasion. 🌟💚
