Prepare the Biscuit Dough: Begin by heating the milk in a small saucepan. Add the green tea bags and allow them to steep in the warm milk for a few minutes to infuse the flavor. Remove the tea bags and set aside.

Mix the Dough: In a mixing bowl, start whipping the butter and sugar together with an electric mixer until smooth and creamy. Gradually add the egg yolks, one at a time, and continue mixing until fully incorporated. Slowly add the milk infused with green tea and a pinch of salt to the mixture. Stir to combine.

Add the Flour: Once the mixture is well combined, sift the all-purpose flour and cake flour into the bowl. Mix until a dough forms.

Rest the Dough: Transfer the dough onto a work surface dusted lightly with flour. Knead briefly to form a smooth, compact dough. Wrap the dough in plastic wrap and refrigerate for at least one hour to allow it to rest and firm up.

Prepare the Ganache: While the dough is chilling, chop the dark chocolate into small pieces. In a separate saucepan, bring 150g of fresh cream to a gentle simmer. Add the loose green tea leaves to the cream and let it steep for a few minutes, then strain the cream to remove the tea leaves. Pour the warm cream over the chopped chocolate and stir with a spatula until the mixture becomes a smooth, shiny ganache. Cover the ganache with plastic wrap, placing it directly on the surface to prevent a skin from forming, and refrigerate for about 30 minutes.

Shape the Biscuits: After the dough has rested, lightly dust your work surface with flour. Roll the dough out to about 1/2 cm thick. Using a round cookie cutter with a diameter of 8 cm, cut out 60 discs. Place the discs on a baking tray lined with parchment paper. If desired, use a knife to gently score the letters “THE” on the surface of each biscuit.
