Pepes Ikan Mas Recipe

Ingredients:

  • 1/2 kg carp fish
  • 1 lime
  • 2 bunches of Thai basil
  • 1 piece turmeric leaf, thinly sliced

Spice Paste:

  • 8 red chilies
  • 4 shallots
  • 3 cloves garlic
  • 1-inch piece ginger
  • 1-inch piece turmeric
  • 5 candlenuts
  • 1 stalk lemongrass
  • Salt, to taste
  • Seasoning powder, to taste

Banana Leaf Wrapping:

  • Banana leaves, for wrapping

Instructions:

  1. Clean the fish and marinate it in lime juice for about 10 minutes.

  2. Prepare the Thai basil by washing it thoroughly and set it aside.

  3. In a blender or food processor, grind together the red chilies, shallots, garlic, ginger, turmeric, candlenuts, and lemongrass until it forms a smooth paste.

  4. Mix the ground spice paste with the Thai basil, thinly sliced turmeric leaf, and turmeric leaf.

  5. Coat the fish evenly with the spice mixture.

  6. Wrap the fish in banana leaves and steam until cooked through.

  7. Once cooked, briefly grill the wrapped fish to enhance the aroma.

  8. Serve hot with steamed rice.
