Indonesian Braised Milkfish with Egg and Tofu (Semur Ikan Bandeng Telor Tahu)

Ingredients:

  • 2 milkfish, cleaned and cut into pieces
  • Fried tofu
  • Fried sunny-side up eggs
  • 10 shallots, sliced
  • 5 cloves of garlic, sliced
  • 3 curly red chilies
  • 5 bird’s eye chilies
  • 1 tomato, sliced
  • Salt
  • Royco seasoning (or any seasoning of choice)
  • Pepper
  • Soy sauce

Instructions:

  1. Prepare Ingredients:

    • Fry the tofu until golden brown.
    • Fry the eggs sunny-side up.
    • Prepare the milkfish by cleaning and cutting it into serving pieces.
  2. Make Spice Paste:

    • Grind the shallots and garlic into a smooth paste.
  3. Sauté Spices:

    • In a pan, sauté the ground shallots and garlic paste along with the red chilies and bird’s eye chilies until fragrant.
  4. Add Seasonings:

    • Pour in water, soy sauce, salt, sugar, ground pepper, and Royco seasoning (or your preferred seasoning). Adjust the amount according to taste.
  5. Cooking the Dish:

    • Add the milkfish, fried tofu, fried eggs, and sliced tomatoes into the pan.
  6. Simmer and Adjust:

    • Allow the mixture to come to a boil. Simmer gently until the milkfish is cooked through and the flavors have melded together.
    • Taste and adjust the seasoning if needed.
  7. Serve:

    • Serve hot with steamed rice.
