Instructions

  1. Prepare the Chicken:
    Begin by cutting the chicken breast in half and trimming any excess fat. Slice the chicken into pieces about 1 cm thick. Place the slices in a baking dish and drizzle with a little extra virgin olive oil. Season the chicken with salt and black pepper. Let it marinate for a few minutes to absorb the flavors.

  2. Prepare the Salad Base:
    While the chicken is marinating, wash the arugula and spinach. Dry the leaves using a salad spinner or a clean kitchen towel. Set them aside.
