Instructions:

Step 1: Prepare the Pickled Vegetables

To start, prepare the pickled vegetables for the Bánh Mì. Slice the cucumber, bell peppers, carrot, radish, and spring onions into thin strips. Place these veggies in a large bowl and add the chili vinegar, sugar, salt, and pepper. Mix everything thoroughly and let the pickled vegetables sit in the fridge while you prepare the chicken.

Step 2: Marinate the Chicken

In a separate mixing bowl, combine soy sauce, red chili sauce, honey, black pepper powder, dry ginger powder, and a pinch of salt. Whisk the mixture well to combine, then add the chicken strips. Toss the chicken thoroughly so that it is evenly coated with the marinade. Let it sit for about 10 minutes to absorb all the flavors.

Step 3: Grill the Chicken

Heat a grill pan over medium-high heat. Once the pan is hot, add a brush of extra virgin olive oil to coat the surface. Place the marinated chicken pieces onto the grill. Grill the chicken for about 5 minutes on each side, or until you see golden brown grill marks and the chicken is cooked through.

Step 4: Assemble the Bánh Mì

Take the baguette and cut it into two 6-inch sections. Slice one side of each piece lengthwise, creating a pocket for the fillings. Spread 2 tablespoons of mayonnaise on the inside of each baguette piece. Add a tablespoon of Sriracha sauce to each, spreading it evenly on top of the mayonnaise.

Step 5: Layer the Pickled Vegetables and Grilled Chicken

Now it’s time to layer the sandwich. Start by placing a generous amount of the pickled vegetables inside the baguette. Next, add a portion of the grilled chicken on top of the vegetables, making sure it’s well-distributed.

Step 6: Garnish and Serve

Place sliced pickled jalapeños on top of the grilled chicken, followed by fresh coriander leaves and chopped spring onions. Your Vietnamese-style grilled chicken Bánh Mì is now ready to serve! Repeat the process for the other half of the baguette.

For the ultimate Vietnamese meal experience, serve the Bánh Mì alongside a Red Cabbage Carrot, Sprout, and Onion Salad and a refreshing glass of Cantaloupe (Melon) Juice.

Enjoy your freshly made Vietnamese-style Grilled Chicken Bánh Mì! This sandwich is a perfect fusion of tender chicken, vibrant pickled vegetables, and savory spices, all nestled inside a crunchy baguette. Whether you’re preparing a quick lunch or a special dinner, this flavorful recipe is sure to satisfy your cravings for delicious, authentic Vietnamese cuisine.
