Turkey Tagliata with Fennel and Pomegranate

Preparation:

Cooking the Turkey:
- Start by preparing the turkey. Heat a grill pan over high heat and drizzle with a small amount of extra virgin olive oil. Place the turkey breast on the pan and cook for about 5 minutes on one side. Flip and cook for an additional 25 minutes, allowing the turkey to brown and cook through.

Preparing the Pomegranate Emulsion:
- While the turkey is cooking, prepare the pomegranate emulsion. Cut the pomegranate in half and carefully remove the seeds. Transfer the seeds to a blender or food processor, adding salt and black pepper to taste. Blend for 10–11 seconds until smooth.

Fennel Salad:
- Rinse and trim the fennel, removing the green fronds and the root. Cut the fennel in half, then slice it thinly. Transfer the slices to a bowl. Add 30g of extra virgin olive oil, a pinch of salt, and a dash of black pepper. Gently break the dill leaves into smaller pieces with your hands and toss them in with the fennel. Mix everything together thoroughly.

- Arrange the seasoned fennel mixture on a serving platter. Once the turkey is cooked, slice it into 1cm thick slices. Arrange the turkey slices on top of the fennel.
