Turkey Tagliata with Fennel and Pomegranate

Turkey Breast 800g
Fennel 400g
Pomegranate 400g
Extra Virgin Olive Oil 80g
Black Pepper To taste
Sea Salt To taste
Dill To taste
Flower Salt (optional) To taste

Preparation:

  1. Cooking the Turkey:

    • Start by preparing the turkey. Heat a grill pan over high heat and drizzle with a small amount of extra virgin olive oil. Place the turkey breast on the pan and cook for about 5 minutes on one side. Flip and cook for an additional 25 minutes, allowing the turkey to brown and cook through.
  2. Preparing the Pomegranate Emulsion:

    • While the turkey is cooking, prepare the pomegranate emulsion. Cut the pomegranate in half and carefully remove the seeds. Transfer the seeds to a blender or food processor, adding salt and black pepper to taste. Blend for 10–11 seconds until smooth.
  3. Fennel Salad:

    • Rinse and trim the fennel, removing the green fronds and the root. Cut the fennel in half, then slice it thinly. Transfer the slices to a bowl. Add 30g of extra virgin olive oil, a pinch of salt, and a dash of black pepper. Gently break the dill leaves into smaller pieces with your hands and toss them in with the fennel. Mix everything together thoroughly.
  4. Assembling the Dish:

    • Arrange the seasoned fennel mixture on a serving platter. Once the turkey is cooked, slice it into 1cm thick slices. Arrange the turkey slices on top of the fennel.
  5. Finishing Touches:

    • Sprinkle the pomegranate seeds evenly over the turkey. Add a few flakes of flower salt (optional) and drizzle the pomegranate emulsion and olive oil mixture over the entire dish.
  6. Serve and Enjoy:

    • Serve immediately as a fresh, flavorful main dish, perfect for any special occasion or weeknight meal.
