Ingredients:

Quantity Ingredient
3 Flour
3 Unsalted Butter
2 Smoked Streaky Bacon
4 Onions
4 Sprigs of Thyme
2 Bay Leaves
2 Handfuls of Prunes
1 3/4 tbsp Brown Sugar
12 fl oz Guinness Beer
2 tbsp White Wine Vinegar
2 tbsp Dijon Mustard

Instructions:

  1. Preheat the Oven: Preheat your oven to 300°F (150°C).

  2. Coat the Beef:

    • Put the flour into a large plastic bag.
    • Add the beef pieces a few at a time, shaking to coat evenly.
  3. Brown the Beef:

    • Melt half of the butter in a large flameproof casserole.
    • Brown the beef in batches until it’s beautifully browned and crusty.
    • Once browned, set the beef aside.
  4. Crisp up the Bacon:

    • Add the remaining butter to the casserole.
    • Fry the smoked streaky bacon until it’s nice and crisp.
  5. Add Aromatics:

    • Add the onions, thyme sprigs, and bay leaves.
    • Cook for about 5 minutes over medium heat until the onions are softened.
  6. Deglaze the Pan:

    • Tip in any remaining flour from the bag.
    • Stir well, scraping up those flavorful bits from the bottom of the pan.
  7. Pour in the Guinness:

    • Increase the heat.
    • Pour in the Guinness beer, stirring well to combine.
    • Keep scraping the bottom of the pan to get all those tasty bits mixed in.
  8. Braise the Beef:

    • Return the browned beef to the pan.
    • Stir in the prunes, white wine vinegar, and brown sugar.
    • Season generously with salt and pepper.
    • Bring the mixture to a boil.
  9. Into the Oven:

    • Cover the casserole with a lid.
    • Pop it into the preheated oven and let it braise for 4 hours.
  10. Finish Up:

    • After 4 hours, stir in the Dijon mustard.
    • Return the casserole to the oven, uncovered, for another 30 minutes.
  11. Serve and Enjoy:

    • Once done, remove the casserole from the oven.
