Instructions:

Preheat the Oven: Preheat your oven to 300°F (150°C).

Coat the Beef:
- Put the flour into a large plastic bag.
- Add the beef pieces a few at a time, shaking to coat evenly.

Brown the Beef:
- Melt half of the butter in a large flameproof casserole.
- Brown the beef in batches until it’s beautifully browned and crusty.
- Once browned, set the beef aside.

Crisp up the Bacon:
- Add the remaining butter to the casserole.
- Fry the smoked streaky bacon until it’s nice and crisp.

Add Aromatics:
- Add the onions, thyme sprigs, and bay leaves.
- Cook for about 5 minutes over medium heat until the onions are softened.

Deglaze the Pan:
- Tip in any remaining flour from the bag.
- Stir well, scraping up those flavorful bits from the bottom of the pan.

Pour in the Guinness:
- Increase the heat.
- Pour in the Guinness beer, stirring well to combine.
- Keep scraping the bottom of the pan to get all those tasty bits mixed in.

Braise the Beef:
- Return the browned beef to the pan.
- Stir in the prunes, white wine vinegar, and brown sugar.
- Season generously with salt and pepper.
- Bring the mixture to a boil.

Into the Oven:
- Cover the casserole with a lid.
- Pop it into the preheated oven and let it braise for 4 hours.

Finish Up:
- After 4 hours, stir in the Dijon mustard.
- Return the casserole to the oven, uncovered, for another 30 minutes.
