Oil 2 teaspoons
Salt To taste

Instructions

  1. Heat the Oil:
    In a deep pan or wok, heat 2 teaspoons of oil over medium heat. Once the oil is hot, add the cumin seeds and nigella seeds. Sauté for about 15 seconds until they begin to splutter.

  2. Add Ginger and Spices:
    Add the chopped ginger and cook for a minute. Then, add the tomato puree along with turmeric powder, asafoetida, red chili powder, and coriander powder. Cook the mixture until the tomatoes become soft and the spices blend together.

  3. Cook the Vegetables:
    Now, add the chopped potatoes and brinjal (eggplant) to the pan. Stir well to combine the vegetables with the spices. Add salt to taste and pour in 2 cups of water.

  4. Simmer the Sabzi:
    Reduce the flame to low and cover the pan with a lid. Let the vegetables cook for about 20-25 minutes, or until they become soft and tender. Stir occasionally to ensure the vegetables cook evenly.
