Beetroot Chutney Recipe – A Healthy and Delicious Side Dish

Urad dal (black gram) 1 tablespoon
Fresh coconut (grated) 1/3 cup
Water 1/2 cup
Salt To taste

For tempering (Tadka):

Mustard seeds (rai) 1/2 tablespoon
Curry leaves 1 sprig

Instructions:

  1. Start with the tempering:

    • In a pan, heat 1/2 tablespoon sesame oil. Add the chana dal and urad dal to the oil, frying them for 20 seconds until they start to brown lightly.
    • Add a pinch of hing and the curry leaves, sautéing for another 10 seconds.
  2. Cook the beetroot:

    • Add the grated beetroot and green chilies to the pan. Stir well and let it cook on low flame for 5-6 minutes.
    • Once the beetroot has softened, turn off the heat. Add the grated coconut to the pan and mix thoroughly.
  3. Grind the chutney:

    • Let the cooked mixture cool slightly. Transfer it to a mixer or blender, adding salt and a little water. Grind the mixture into a smooth paste.
  4. Prepare the tempering (Tadka):

    • In a small pan, heat 1 tablespoon of sesame oil. Add mustard seeds and let them splutter.
    • Add the curry leaves and a pinch of hing to the pan, allowing them to sizzle for a few seconds.
  5. Combine and serve:

    • Pour the prepared tempering over the chutney and mix well. The chutney is now ready to serve.
    • Serve this tangy and spicy beetroot chutney with rice, sambar, or enjoy it as an accompaniment to a variety of South Indian dishes like Chou Chou Thoran.
