Green Chilies (chopped) 2

Total Time: 30 minutes

Instructions to Prepare Broccoli Rava Idli

  1. Roast the Rava and Polenta:
Begin by heating a pan over medium heat. Add the polenta and semolina to the pan, and dry roast them for 2-3 minutes until they become slightly aromatic. Once done, remove from the heat and transfer the mixture into a bowl. Set aside for later use.

  2. Prepare the Seasoning:
In the same pan, heat 1 tsp of oil. Add the mustard seeds and let them splutter. Next, add asafoetida and white urad dal, sautéing until the dal turns golden brown, about 1-2 minutes.

  3. Add the Flavorful Ingredients:
To the seasoned mixture, add cashews, green chilies, curry leaves, and fresh ginger. Stir continuously and cook until the cashews turn golden brown and the spices are well combined, releasing their flavors.

  4. Cook the Broccoli:
Now, add the grated broccoli to the pan and mix it in with the sautéed ingredients. Stir the mixture for about 2 minutes until the broccoli becomes tender. Season with salt to taste. Turn off the heat and set aside to let the mixture cool slightly.

  5. Combine the Ingredients:
Meanwhile, in another bowl, combine the roasted rava-polenta mixture with 1 cup of yogurt and 1/2 cup of water. Mix well, ensuring there are no lumps. Let the mixture sit for about 15 minutes to allow the rava to soak up the yogurt and water.

  6. Add the Broccoli Mixture:
Once the rava mixture has rested, add the cooked broccoli mixture into the bowl. Stir gently to combine all the ingredients. Then, add 1/2 tsp of Eno fruit salt and mix well. If the mixture appears too thick, you can add a little more water to reach a slightly pourable consistency.

  7. Prepare the Idli Steamer:
Pour water into the bottom of the idli steamer and grease the idli plates with a bit of ghee or oil to prevent sticking. Spoon the idli batter into the idli molds, filling them to about 3/4 full.

  8. Steam the Idlis:
Cover the steamer with a lid and steam the idlis for 10-12 minutes. To check if they’re done, insert a toothpick into the center of one idli. If it comes out clean, the idlis are ready.

  9. Serve:
Once steamed, remove the idlis from the plates and gently serve them on a platter. You can drizzle some ghee on top for added richness.

Serving Suggestions:

  • Serve your Broccoli Rava Idli with fresh coconut chutney and filter coffee for an authentic South Indian breakfast.
  • For a different twist, you could pair these idlis with a tangy tomato chutney or a spicy sambar.

Tips:

  • You can also make the batter ahead of time and store it in the fridge for a couple of hours before steaming.
  • If you’re looking to increase the nutritional value, consider adding finely chopped carrots or peas along with the broccoli.
  • Adjust the spice levels by modifying the number of green chilies according to your preference.

This Broccoli Rava Idli recipe is an excellent way to enjoy a healthy and flavorful breakfast. With the vibrant green color from the broccoli and the aromatic spices, it’s a dish that will surely brighten up your mornings and provide you with a nutritious start to your day. Enjoy!
