Nugget Ayam Sayur (Chicken and Vegetable Nuggets)
Ingredients:
- 500 grams chicken breast, cut into small pieces
- 4 cloves garlic, fried
- 6 cloves shallots, fried
- 6 tablespoons sago flour
- 6 tablespoons cornstarch
- 2 large spring onions, sliced
- 2 carrots, grated (you can substitute with grated cheese)
- 1 celery stalk, finely chopped
- 1 tablespoon salt (adjust to taste)
- Optional: flavor enhancers as per your preference
- 1 egg
- Approximately 1 cup of water
For Coating:
- 1 cup all-purpose flour mixed with enough water to make a thick batter
- 1 egg
- 200 grams breadcrumbs (adjust as needed)
Steps:
- Blend the chicken, fried garlic, fried shallots, and about half a cup of water until smooth. This may take several batches in the blender.
- Transfer the blended mixture to a bowl. Add all the remaining ingredients (sago flour, cornstarch, spring onions, grated carrots, celery, salt, and the egg). Gradually add water until the mixture reaches a thick, dough-like consistency. Don’t worry if it seems too runny; it will firm up when steamed.
- Taste the mixture and adjust the seasoning if necessary.
- Line a baking pan (I used a 12×24 cm brownie pan) with parchment paper and grease it with a bit of oil. Pour the mixture into the pan and steam for approximately 25 minutes until cooked through.
- Once cooked, let it cool. Remove from the pan and cut into pieces about 1 cm thick.
- Prepare the coating: In one bowl, mix all-purpose flour with enough water to create a thick batter. In another bowl, beat the egg. Place breadcrumbs in a third bowl.
- Dip each nugget piece into the flour batter, then the egg, and finally coat with breadcrumbs.
- Heat oil in a pan over medium heat. Fry the nuggets until golden brown. You can fry a small batch at a time and store the rest in an airtight container in the freezer for future use.
- Frying tips: Fry only a few pieces at a time in a shallow amount of oil to avoid them becoming overly greasy.
- Enjoy your homemade chicken and vegetable nuggets! These nuggets are perfect for a nutritious snack or meal for kids, ensuring they get both protein and vegetables in one delicious bite.
Storage Tips:
- Store the uncooked, coated nuggets in an airtight container in the freezer. They can be fried directly from frozen whenever needed, making them a convenient and healthy option for quick meals.
Yield:
- This recipe makes approximately 40 nuggets, making it a cost-effective and nutritious option for meal prep. If you prefer a chunkier texture, reduce the amount of flour and cornstarch to 1 tablespoon each and adjust the water accordingly.

- Feel free to experiment with additional vegetables or seasonings to suit your taste preferences. This basic recipe provides a great starting point for customization.
