Jowar Flour (Sorghum) 1 cup
Rice Flour 1/2 cup
Ginger Garlic Paste 1 tablespoon
Cumin Seeds (Jeera) 1 teaspoon
Coriander Powder (Dhania) 1 teaspoon
Turmeric Powder (Haldi) 1/2 teaspoon
Spring Onion (Bulb & Greens), finely chopped 1 cup
Salt To taste
Red Chilli Powder To taste
Oil (for shallow frying) As needed

Instructions:

  1. Prepare the Flour Mixture: In a large mixing bowl, combine all the flours – Bajra flour, Jowar flour, and rice flour. Add the ginger garlic paste, coriander powder, turmeric powder, salt, and red chilli powder. Stir well to combine all the dry ingredients evenly.

  2. Make the Batter: Gradually add water to the dry mixture to form a smooth batter. The consistency of the batter should be pourable, but not too runny. Adjust the amount of water accordingly to achieve the right texture.

  3. Add the Flavor Boosters: Once the batter is well-mixed, add the cumin seeds and finely chopped spring onions. Mix thoroughly to distribute the spring onions and cumin seeds evenly throughout the batter. Stir the batter well to ensure there are no lumps.

  4. Heat the Tawa: Place a non-stick tawa (griddle) over medium heat. Once it’s hot, add a little oil and spread it evenly across the surface.

  5. Cook the Cheela: Using a ladle, pour a portion of the batter onto the tawa and gently spread it out into a circular shape, about 6-8 inches in diameter. Drizzle a few drops of oil around the edges of the cheela. Cook for about 2-3 minutes on one side until it turns golden brown.

  6. Flip and Cook: Flip the cheela carefully and cook the other side for another 2-3 minutes, until both sides are crispy and golden. Repeat the process for the remaining batter, adding oil as needed to fry each cheela to perfection.

  7. Serve: Once cooked, remove the cheelas from the tawa and place them on a plate. Serve the Mixed Flour and Spring Onion Cheela hot with Dhaniya Pudina Chutney and a steaming cup of Masala Chai for a fulfilling and energizing breakfast.
