Cuisine: South Indian

Course: Snack

Diet: Vegetarian

Prep Time: 37 minutes

Cook Time: 30 minutes

Yield: 20-25 pieces

Ingredients

Ingredient Quantity
Whole Wheat Flour 2 cups
Ragi Flour (Finger Millet / Nagli) 1/2 cup
Fresh Coriander (Dhania) Leaves, chopped 1/4 cup
Curd (Dahi / Yogurt) 2 tablespoons
Ginger (paste) 1/2 teaspoon
Garlic (paste) 1 clove
Green Chilli (paste) 1/2
Sugar 1/2 teaspoon
Oil or Butter 2 teaspoons
Cumin Seeds (Jeera) 1/2 teaspoon
Turmeric Powder (Haldi) 1/4 teaspoon
Salt To taste

Instructions

  1. Preheat the Oven & Prepare the Baking Tray:
Begin by preheating your oven to 180°C (350°F). Line a baking tray with parchment paper and set it aside for later use.

  2. Prepare the Dough:
In a large mixing bowl, combine the whole wheat flour and ragi flour. Add the curd, ginger paste, garlic paste, green chili paste, cumin seeds, sugar, turmeric powder, freshly chopped coriander leaves, and oil to the flour mixture.
Season with salt according to your taste. Mix everything well to ensure the ingredients are evenly distributed.

  3. Knead the Dough:
Gradually add water, little by little, and mix to form a soft and pliable dough. Be careful not to add too much water at once; the dough should not be too stiff nor too sticky. Knead for about 5-6 minutes until the dough becomes smooth and elastic.

  4. Roll the Dough:
Once the dough is ready, divide it into two equal portions. Dust your rolling surface with some dry flour and roll each portion of dough into a large circle, approximately 8 inches in diameter.

  5. Cut into Strips:
Using a sharp knife or a pizza cutter, slice the dough into strips about 1/2 to 1 inch wide.

  6. Twist the Strips:
Take each strip and gently twist it with your hands to form a spiral shape. Place each twisted strip on the prepared baking tray, ensuring they are not overcrowded.

  7. Bake the Twisters:
Bake the twisters in the preheated oven for about 20 minutes, or until they turn crisp and light golden brown. Halfway through baking, gently flip each twister to ensure they cook evenly.

  8. Cool and Store:
Once done, remove the twisters from the oven and let them cool to room temperature. As they cool, they will crisp up even further.
Store the Ragi Masala Twisters in an airtight container to keep them fresh for up to a week.

  9. Serving Suggestion:
Serve your homemade Ragi Masala Twisters during tea time with a cup of Qahwa or Masala Chai for a delightful and wholesome snack experience. Enjoy these crispy delights as a healthier alternative to fried snacks.
