Ingredients:

  • 2 blocks of firm tofu
  • 1 large egg
  • 1 carrot
  • 1 stalk of green onion (scallion)
  • 2 cloves of garlic
  • 3 shallots
  • Black pepper, to taste
  • 7 tablespoons of flour (all-purpose, fritter flour, or multipurpose flour)
  • 2 tablespoons of olive oil (or regular cooking oil) for greasing the mold

Instructions:

  1. Prepare the Vegetables:

    • Slice the green onion into thin rings.
    • Grate the carrot to your preferred texture, either fine or coarse.
    • If desired, you can also add other ingredients such as mushrooms or sausage for extra flavor and texture.
  2. Blend Aromatics:

    • Finely chop the garlic and shallots. You can use a food processor or mortar and pestle to ensure they are well blended.
    • Season with black pepper according to your taste preferences.
  3. Combine Ingredients:

    • In a mixing bowl, combine the crumbled tofu, grated carrot, sliced green onion, and the blended garlic and shallots.
    • Crack the egg into the mixture and stir well to combine all the ingredients.
  4. Add Flour:

    • Gradually add the flour to the mixture, stirring continuously. The flour helps bind the ingredients together and improves the texture of the patties. You may use either all-purpose flour, fritter flour, or multipurpose flour.
  5. Prepare for Steaming:

    • Lightly grease your steamer molds with olive oil or any other cooking oil to prevent sticking.
    • Spoon the tofu mixture into the molds, smoothing the top for an even cook.
  6. Steam the Patties:

    • Place the filled molds in a steamer. To avoid water from dripping onto the patties, cover the lid of the steamer with a cloth or kitchen towel.
    • Steam the patties for 15-20 minutes or until they are firm and have expanded.
  7. Optional Frying:

    • If you prefer a crispy texture, you can pan-fry the patties after steaming. Simply coat them with a bit of beaten egg and fry in a hot pan until golden and crispy on the outside.
