Healthy Tomato, Carrot & Onion Soup Recipe

Tomato soup is often considered healthy, but when we order it at restaurants, it typically contains heavy amounts of butter and cream. Here, we bring you a healthier version of Tomato, Carrot, and Onion Soup that is easy to make and absolutely delicious. It’s light yet flavorful, making it a perfect addition to your dinner table!

Ingredients:
- 1 tablespoon oil
- 7 tomatoes, chopped
- 1 onion, chopped
- 1 carrot, thinly sliced
- 7 garlic cloves, chopped
- Salt, to taste
- 1 teaspoon black pepper, crushed
- 1/2 tablespoon sugar (optional)
Preparation Time: 10 minutes
Cooking Time: 20 minutes
Instructions:
- In a pan, heat the oil over medium heat. Once the oil is hot, add the garlic and sauté for about 20 seconds.
- Add the chopped onion to the pan and cook until they become soft.
- Once the onions are soft, add the sliced carrot and mix well. Season with salt and stir. Cover the pan and let it cook for 3 minutes. The carrots should be partially cooked.
- After 3 minutes, add the chopped tomatoes and black pepper. Stir well and cook for another minute.
- Add water to the pan and cover it again. Cook until the tomatoes become soft.
- Once the tomatoes are soft, turn off the gas and let the mixture cool down.
- After cooling, strain the mixture and separate the water from the vegetables.
- Blend the vegetables into a smooth puree using a blender, then add the reserved tomato water to the puree. Stir well and return it to the pan.
- Turn the gas on and cook the mixture for 1 more minute.
- Add salt and sugar (optional), then cook for 3 to 4 minutes.
- Turn off the gas and serve hot.
This Tomato, Carrot, and Onion Soup is perfect for a cozy dinner. Pair it with spinach dal, stuffed okra (bharwa bhindi), and whole wheat roti (fulka) for a complete meal. Enjoy this healthy soup especially during the colder months!
