Ingredients
- 1 cup rice
- 1 onion, finely chopped
- 1 tomato, chopped
- 4 green chillies, chopped
- 1-inch ginger, grated
- 1 sprig curry leaves
- 1 carrot, finely chopped
- 5 green beans, chopped
- 1/4 cup green peas
- 2 tbsp oil
- 1 tsp mustard seeds
- 1 tbsp white urad dal
- 1 tbsp chana dal
- Salt, to taste
- 2 cups hot water

Soak and Grind the Rice: Start by soaking the rice in water for 2 hours. After soaking, drain the water and spread the rice on a clean cloth to dry. Once dried, grind the rice in a mixer grinder to a coarse powder.

Cook the Vegetables: In a steamer, add the chopped carrot, green beans, and green peas. Sprinkle a little salt and steam the vegetables until they are cooked. Set them aside.

Tempering: Heat oil in a pressure cooker. Once the oil is hot, add mustard seeds and let them crackle for about 10 seconds. Then, add the white urad dal and chana dal, and cook for 1 minute until they start to turn golden.

Sauté the Aromatics: Add the chopped onion, green chillies, grated ginger, and curry leaves to the cooker. Sauté everything until the onion becomes soft and translucent.

Cook the Tomatoes: Add the chopped tomatoes to the cooker and cook until they soften.

Combine the Cooked Vegetables: Add the steamed vegetables to the cooker, followed by salt to taste. Stir and cook for another minute.

Add Water and Rice Powder: Pour in 3 cups of hot water and bring it to a boil. Once the water is boiling, add the ground rice powder and mix everything well.

Pressure Cook: Close the lid of the pressure cooker and cook on medium heat until 2 whistles are heard. Allow the pressure to release naturally.

Final Touch: Open the pressure cooker, mix the upma gently, and add 1 tablespoon of ghee. Stir well to combine.

Serve: Garnish the Vegetable Rice Upma with freshly chopped coriander leaves and serve it hot. For an authentic South Indian breakfast, pair it with coconut chutney and filter coffee.
