Rice Paper Vegetarian Spring Rolls (Healthy Summer Rolls)

These Rice Paper Vegetarian Spring Rolls, also known as Summer Rolls, are perfect appetizers for picnics or summer parties. The beauty of this recipe lies in its versatility—the filling can vary widely, and this version includes tofu, roasted mushrooms, and fresh raw vegetables, all tossed in a tangy, spicy dressing.

Ingredients

For the Rice Paper Rolls:

  • 8 to 10 rice paper rolls

For the Filling:

  • 100g Tofu, finely chopped
  • 100g Button mushrooms, finely chopped
  • ½ Red bell pepper (capsicum), thinly sliced
  • ½ cup Raw papaya, grated
  • 1 Cucumber, de-seeded and thinly sliced
  • 1 Carrot (gajjar), grated
  • 3 to 4 Spring onions (bulb & greens), finely chopped
  • Small bunch of Mint leaves (pudina)

For the Dressing:

  • 1 tsp Rice vinegar
  • ½ tsp Red chili sauce
  • ½ tsp Honey
  • Juice of 1 small lemon
  • Small bunch of Coriander (dhania) leaves, finely chopped
  • Salt, to taste

Preparation Time: 15 minutes

Cooking Time: 40 minutes

Total Time: 55 minutes

Serving: 4-6


Instructions

  1. Prepare the Vegetables for the Filling:

    • Heat a teaspoon of oil in a wok. Stir-fry the mushrooms until softened and most of the moisture has evaporated. Once done, turn off the heat and set aside.
    • Cut the vegetables (bell pepper, cucumber, carrot) lengthwise as mentioned in the ingredient list and place them in a large bowl. Add the sautéed mushrooms to the bowl.
  2. Make the Dressing:

    • In a separate bowl, whisk together the rice vinegar, red chili sauce, honey, lemon juice, and chopped coriander. Pour this dressing over the prepared vegetables and toss well. Adjust salt and spice levels to your taste.
  3. Soften the Rice Paper Wrappers:

    • Fill a wide pan with warm water. Immerse each rice paper wrapper into the water and let it soften for about 30 seconds. You will notice the wrapper starting to soften and become pliable. Carefully remove it from the water and spread it out on a wooden board.
  4. Assemble the Spring Rolls:

    • Place a small amount of the vegetable filling in the center of the softened rice paper wrapper. Be careful not to overfill, as you’ll need space to shape the roll.
    • To form the roll, fold both sides of the wrapper over the filling, then roll it tightly from the bottom up. Arrange the roll on a platter.
  5. Continue Rolling:

    • Repeat the process of soaking, filling, and rolling the rice wrappers. Arrange the completed rolls on a platter and cover them with a damp muslin cloth. If you’re preparing them in advance, cover with plastic wrap to keep the rolls from drying out.
  6. Serve:

    • When ready to serve, remove the plastic wrap, slice the rolls in half, and serve them with a side of Peanut Chili Dipping Sauce for added flavor.
