Instructions

  1. Prepare the Wheat Grass:
    Begin by thoroughly washing the wheat grass to remove any dirt or impurities. Once cleaned, set it aside for blending.

  2. Soak Tamarind:
    Soak the tamarind in a small bowl of warm water. After 10–15 minutes, extract the tamarind juice and discard the solids.

  3. Blend Wheat Grass and Tamarind Juice:
    In a blender, combine the wheat grass with the tamarind water. You can add additional water if necessary, but be careful not to exceed 500 ml to maintain the right consistency for the rasam.

  4. Strain the Mixture:
    After blending, strain the mixture to remove the excess fiber. This will leave you with a smooth, juice-like consistency that forms the base of your rasam.

  5. Cook the Rasam:
    In a heavy-bottomed pan, add the asafoetida (hing), chopped tomatoes, the wheat grass and tamarind juice, turmeric powder, salt, and curry leaves. Bring the mixture to a boil. Once it starts boiling, reduce the heat and add the rasam powder. Allow it to cook until it becomes frothy and aromatic. Switch off the gas once it reaches the desired consistency.

  6. Prepare the Tadka (Tempering):
    In a small tadka pan, heat a little ghee. Add mustard seeds and let them splutter. Then, add the dry red chili, garlic cloves, and cumin seeds. Sauté for a minute until fragrant. Pour this tempering over the rasam, giving it a final stir.

  7. Garnish and Serve:
    Garnish the Wheat Grass Rasam with fresh coriander leaves for a burst of freshness. Serve it hot with steamed rice and a side of Cauliflower Thoran for a wholesome South Indian meal.
