Whole Wheat Sonth Ke Ladoo Recipe
Sweets can be both indulgent and healthy, and Whole Wheat Sonth Ke Ladoo is a perfect example of this balance. This North Indian treat is made with dry ginger powder (sonth), whole wheat flour, mastic gum (gond), desi ghee (clarified butter), jaggery, mixed nuts, and dried coconut, making it a delightful snack packed with flavor and nutrients. Often enjoyed in the winter season for its warming properties, it also pairs wonderfully with a cup of masala chai.

Ingredients:

  • 1 cup Whole Wheat Flour
  • 1/4 cup Dry Ginger Powder (Sonth)
  • 3/4 cup Jaggery
  • 1/3 cup Gond (Natural Gum)
  • 1/2 cup Grated Dry Coconut (Kopra)
  • 1/2 cup Mixed Nuts (Almonds, Cashews, Pistachios)
  • 1/3 cup Ghee

Preparation Time: 10 minutes

Cooking Time: 30 minutes

Instructions:

  1. Fry Gond: Heat 1 tablespoon of ghee in a heavy-bottomed pan. Add gond (mastic gum) and fry on low heat until it puffs up and turns a light brown color. Remove from the pan and set aside.

  2. Roast Whole Wheat Flour: In the same pan, add the remaining ghee and roast the whole wheat flour on low heat until it releases a pleasant aroma and the ghee begins to separate from the flour. Transfer to a wide bowl.

  3. Roast Ginger Powder: Add dry ginger powder to the pan and roast for about a minute or until it releases its fragrance. Add this to the wheat flour mixture.

  4. Dry Roast Coconut: Dry roast the grated coconut for about a minute, then add it to the bowl with the wheat flour mixture.

  5. Prepare Jaggery Syrup: In the same pan, break jaggery into pieces and melt it on low heat. Once melted, filter the syrup to remove impurities, and then pour the filtered jaggery syrup into the bowl with the flour mixture.

  6. Add Nuts: Grind the almonds and cashews into a coarse powder, and chop the pistachios. Add all the mixed nuts to the bowl.

  7. Add Gond: Crush the fried gond into small pieces and add it to the mixture.

  8. Mix and Shape: Mix all the ingredients well and allow the mixture to cool to a bearable temperature. Once cool enough to handle, shape the mixture into lemon-sized round balls.

  9. Store: Store the ladoos in an airtight container. These ladoos stay fresh for 3 to 4 months.
