Bitter Leaf & Chicken Soup

Ingredients

  • 800 grams bitter leaf (sawi pahit)
  • 500 grams chicken
  • 30 grams dried shiitake mushrooms
  • 70 grams ginger
  • 2 liters water
  • Salt and bouillon seasoning to taste

Instructions

  1. Prepare the Ingredients: Start by cleaning all your ingredients thoroughly. Rinse the ginger and bitter leaf, then cut them into suitable pieces. Clean the chicken thoroughly, then boil it in water. Once the water reaches a boil, discard the water, and rinse the chicken again until it is clean.

  2. Rehydrate the Mushrooms: Wash the dried shiitake mushrooms, then soak them in warm water for about 10 minutes to rehydrate.

  3. Cook the Soup: In a large pot, add 2 liters of water along with the chicken, rehydrated mushrooms, and ginger. Bring the mixture to a boil and cook for about 20 minutes.

  4. Add the Bitter Leaf: Once the initial cooking time is complete, add the bitter leaf to the pot. Stir well to combine.

  5. Season and Simmer: Season the soup with salt and bouillon seasoning according to your taste. Continue to cook the soup until the bitter leaf becomes tender, approximately 10 minutes.

  6. Final Touches: Taste the soup and adjust the seasoning if needed. Once done, turn off the heat and transfer the soup to serving bowls.

  7. Serve: Your bitter leaf and chicken soup is now ready to be enjoyed. Serve hot and savor the comforting flavors of this homemade dish.
