Ingredients:
- 3 tbsp olive oil
- 2 onions, diced
- 4 garlic cloves, minced
- 3 carrots, diced
- 4 celery stalks, diced
- 1 red bell pepper, diced
- 8 sun-dried tomatoes packed in oil, chopped
- 2 tsp dried basil
- 1 tsp dried oregano
- 6 cups beef broth
- 1 can (14.5 oz) crushed tomatoes
- 2 tbsp tomato paste
- 1 cup pearl barley
- 1 cup dried lentils
- Salt and pepper to taste
- 1/4 cup fresh parsley, chopped
Instructions:
- In a large saucepan, heat olive oil over medium-high heat.
- Add diced onions and minced garlic, and sauté for about 10 minutes or until the onions are translucent.
- Add diced carrots, celery, red bell pepper, chopped sun-dried tomatoes, dried basil, and dried oregano to the saucepan.
- Cook until the red bell pepper is just softened, stirring occasionally.
- Pour in the beef broth, crushed tomatoes, and tomato paste. Bring the mixture to a boil.
