Brongkos toLo: Beef, Tofu, and Peanuts Stew

Ingredients:

  • Tofu: As desired (preferably fried tofu, known as tahu pong)
  • Peanuts: 100 grams (soaked overnight)
  • Beef: As desired (cut into chunks)
  • Coconut Milk: 2 packets (Kara brand)

For the Spice Paste:

  • Bird’s Eye Chilies: 10 pieces
  • Palm Sugar: 2 pieces (or to taste)
  • Turmeric: 1 thumb-sized piece
  • Ginger: 1 thumb-sized piece
  • Bay Leaves: 2 pieces
  • Galangal: 1 thumb-sized piece
  • Coriander Seeds: A pinch
  • Cinnamon Stick: To taste
  • Cumin Seeds: To taste
  • Cardamom Pod: 1 piece
  • Candlenuts: 2 pieces
  • Salt: To taste
  • Beef Bouillon Powder: To taste
  • Shallots: 5 pieces
  • Garlic: 3 cloves
  • Kluwek (Keluak): 1 piece (crushed)

Instructions:

  1. Prepare the Spice Paste: Using a mortar and pestle, grind all the spices into a fine paste, except for the bay leaves, chilies, palm sugar, and galangal.

  2. Cook the Spice Paste: Heat a bit of oil in a pan over medium heat. Add the ground spice paste and sauté until aromatic. Add a small amount of water if needed to prevent sticking.

  3. Add Coconut Milk and Chilies: Pour in the coconut milk and stir well. Add the whole bird’s eye chilies to the mix, keeping them intact for a milder flavor.

  4. Simmer the Beef and Peanuts: Add the beef chunks and soaked peanuts into the pan. Cook gently until the beef becomes tender and the peanuts are cooked through.

  5. Adjust the Consistency: Add water as needed to achieve your desired stew consistency. Then, add the tofu and let it cook until everything is thoroughly done and flavors are well combined.

  6. Final Touches: Season with salt and beef bouillon powder to taste. Adjust sweetness by adding palm sugar if necessary.
