Sop Tulang Sapi (Beef Bone Soup)

Ingredients:

  • 1 beef bone (ankle/shank)
  • 1 carrot
  • 1 potato
  • 1 bunch of scallions and celery
  • 1 tomato
  • 5 cloves of garlic
  • 5 shallots
  • 1/4 onion
  • 1 piece of ginger
  • 1.5 liters of water
  • 1 tablespoon granulated sugar
  • 1 teaspoon ground pepper
  • 1.5 teaspoons salt
  • 2 tablespoons cooking oil for sautéing
  • Fried shallots, for garnish

Preparation Steps:

  1. Prep the Ingredients:

    • Peel and wash the potato, carrot, scallions, and celery. Cut them into bite-sized pieces.
    • Halve the tomato, and set aside.
  2. Cook the Beef Bone:

    • In a large pot, place the beef bone and add water.
    • Add salt, sugar, crushed ginger, and chopped onion.
    • Bring to a boil and let it simmer until the broth is rich and flavorful.
  3. Sauté the Spices:

    • In a mortar and pestle, grind the shallots until semi-smooth, and crush the garlic cloves.
    • Heat oil in a skillet or wok over medium heat.
    • Sauté the ground shallots and crushed garlic until they become fragrant and translucent.
  4. Combine and Cook:

    • Add the sautéed spices to the pot with the beef bone broth.
    • Add the carrot and potato pieces.
    • Sprinkle in the ground pepper and stir well.
    • Let the soup simmer for about 10 minutes until the vegetables are tender.
  5. Add Final Ingredients:

    • Add most of the chopped tomato and scallions into the pot, reserving some for garnish.
    • Let the soup cook for a few more minutes until all the flavors meld together.
  6. Serve:

    • Ladle the soup into serving bowls.
    • Garnish with chopped scallions, celery, fried shallots, and the remaining tomato pieces.
    • For an extra burst of freshness, squeeze a bit of lime or lemon juice over the soup.
