Sop Tulang Sapi Recipe

Sop Tulang Sapi, a savory and hearty Indonesian beef bone soup, is a comforting dish that brings rich flavors to your table. This recipe combines tender beef bones with potatoes, carrots, and a blend of aromatic spices to create a satisfying meal. Here’s how to make it:

Ingredients:

  • 1 kg beef bones (tulang sapi)
  • 10 potatoes, peeled and cut into chunks
  • 10 carrots, peeled and cut into chunks
  • 2 packets beef stock seasoning (Royco Sapi)
  • Celery leaves (seledri), for garnish
  • Green onions (daun bawang), chopped, for garnish
Spices:
  • 8 cloves garlic, minced
  • Salt, to taste
  • Seasoning (penyedap rasa), to taste
  • Sugar, to taste
  • Black pepper, to taste
  • Nutmeg (pala), to taste
Spices to Drop In:
  • 4 star anise (bunga lawang)
  • 1 piece ginger (jahe), sliced

Instructions:

  1. Prepare the Beef Bones:

    • In a large pot, combine the beef bones with ginger and beef stock seasoning (Royco). Add enough water to cover the bones.
    • Bring to a boil, then reduce the heat and let it simmer until the beef bones are tender. Do not discard the water as it will form the base of your soup.
  2. Prepare the Aromatic Paste:

    • While the beef bones are cooking, prepare the aromatic paste. In a separate pan, heat some oil and sauté the minced garlic until it becomes fragrant and golden brown.
  3. Combine Ingredients:

    • Once the beef bones are tender, add the sautéed garlic paste into the pot with the beef bones. Stir well to combine.
  4. Add Vegetables and Spices:

    • Add the potatoes and carrots to the pot. Continue to cook until the vegetables are tender.
    • Add celery leaves and green onions for garnish.
    • Drop in the star anise and sliced ginger. Season the soup with salt, seasoning, sugar, black pepper, and nutmeg to taste. Adjust the flavors according to your preference.
  5. Final Adjustments:

    • Let the soup simmer for an additional 10-15 minutes to allow the flavors to meld together.
    • Check the seasoning and adjust if necessary.
  6. Serve:

    • Ladle the soup into bowls, making sure to include a generous amount of beef bones, vegetables, and aromatic spices in each serving.
    • Garnish with extra celery leaves and green onions if desired.

Enjoy your delicious Sop Tulang Sapi, a comforting and flavorful beef bone soup that’s perfect for any occasion!
