Beef Rib Soup Recipe (Sup Iga Sapi)

This rich and comforting Beef Rib Soup, known as Sup Iga Sapi, is a hearty Indonesian dish that combines tender beef ribs with a medley of vegetables and aromatic seasonings. Perfect for a cozy meal, this recipe is designed to be both satisfying and flavorful, featuring a balance of savory and fresh elements. Follow these steps to create a delightful bowl of soup that will warm you from the inside out.

Ingredients:

  • 500 grams beef ribs (iga sapi)
  • 250 grams broccoli (cut into florets)
  • 200 grams carrots (sliced)
  • 200 grams potatoes (diced)
  • A handful of scallions (daun bawang pre)
  • A handful of celery leaves (seledri)
  • 3 cloves shallots (bawang merah)
  • 3 cloves garlic (bawang putih)
  • To taste: black pepper (merica)
  • To taste: fried shallots (bawang goreng)
  • To taste: salt (garam)
  • To taste: seasoning or broth powder (penyedap rasa/kaldu)
  • Water (as needed)

Instructions:

  1. Prepare the Aromatics:

    • Begin by finely grinding the shallots, garlic, and black pepper together. This blend will form the aromatic base of your soup.
  2. Prepare the Vegetables:

    • Slice the carrots, cut the broccoli into bite-sized florets, and dice the potatoes. Chop the scallions and celery leaves into small pieces.
  3. Sauté the Aromatics:

    • Heat a little oil in a pot over medium heat. Add the ground shallot, garlic, and black pepper mixture. Sauté until the mixture is fragrant and golden brown.
  4. Add Water:

    • Pour in enough water to create the soup base. Adjust the quantity according to your preference for the soup’s thickness.
  5. Cook the Beef Ribs:

    • Add the pre-cooked beef ribs to the pot. If the beef ribs are not pre-cooked, you can boil them separately until tender before adding them to the soup.
  6. Incorporate Vegetables:

    • Add the sliced carrots, broccoli florets, diced potatoes, chopped scallions, and celery leaves to the pot. Stir to combine all the ingredients.
  7. Season the Soup:

    • Season with salt and broth powder (or seasoning) according to your taste. Add a pinch of sugar if desired to balance the flavors.
  8. Simmer:

    • Allow the soup to simmer until the vegetables are tender and the flavors are well melded, about 30-40 minutes.
  9. Garnish and Serve:

    • Once cooked, serve the soup hot, garnished with a sprinkle of fried shallots for added crunch and flavor.

Enjoy your hearty bowl of Beef Rib Soup, perfect for a comforting meal that brings warmth and satisfaction to your table!
