Beef Ribs Soup (Sup Iga Sapi)

Ingredients

  • 500 grams of high-quality beef ribs
  • 2 carrots
  • 1 potato
  • 1 tomato
  • ½ onion (medium-sized)
  • 4 stalks of celery
  • 3 stalks of scallions
  • 1 teaspoon sugar
  • 300 ml beef broth
  • Salt and pepper to taste
  • Water, as needed
  • For the spice paste:
    • 4 cloves of garlic
    • 1 teaspoon black pepper
    • 1 teaspoon salt
    • A pinch of nutmeg

Instructions

  1. Prepare the Beef Ribs: Begin by simmering the beef ribs in a large pot of water until they are tender, which should take about 60 minutes. Skim off any foam that forms on the surface.

  2. Make the Spice Paste: While the beef ribs are cooking, prepare the spice paste. In a mortar and pestle or a food processor, blend together the garlic, black pepper, salt, and nutmeg until finely ground.

  3. Prepare the Vegetables: Peel and cut the carrots and potato into your desired shapes. Chop the celery and scallions into finger-length pieces. Dice the tomato and finely chop the onion.

  4. Sauté the Aromatics: In a separate pan, heat a bit of oil over medium heat. Add the blended spice paste along with the chopped onion. Sauté until the onion is translucent and the mixture is fragrant.
